Well chaps…..Thanksgiving turkey was a huge success and turned out ahmazing.

Started.with a good grill clean, then prepped the turkey last night with a butter and maple syrup and herb injection. Salt and peppered the skin, then left in the fridge overnight to dry some.

It hit the smoker this morning at 1130, and was resting by 5pm. Stuffed apples and oranges inside, smoked at 250⁰ for 1 1/2 hour to get the smoke, then upped to 350⁰. The last half hour was bumped to 375⁰.

The juiciest turkey I've ever had. Not sure I can go back to oven turkey 😄.

Smoke was a hickory, maple, cherry blend and inside the smoke tube I used applewood pellets. I just started to carve it and realized I hadn't taken any pics, so….the really good full pic was missed….cause…I'm a dumbass 🤷‍♂️🫣.

    How do you respond to the 3 probes? I assume the leg is done before the breasts so do you cover it with foil until the breasts are done or something else?
