THE VIRAL SHEET PAN GNOCCHI – 370 calories | 25g protein (per serving – makes 2)

✨8oz chicken sausage or any protein
✨6oz cauliflower gnocchi or cubed sweet potato
✨1 cup butternut squash, cubed, or any veggies
✨1 cup Brussels sprouts, halved, or any veggies
✨1/2 tbsp balsamic vinegar or apple cider vinegar
✨1/2 tsp Dijon mustard or regular mustard
✨2 tbsp nutritional yeast or Parmesan cheese
✨1/2 tsp garlic powder
✨1/2 tsp dried rosemary
✨1/2 tsp smoked paprika
✨salt and pepper to taste
✨cooking spray

📝 Preheat the oven to 425°F and line a large sheet pan with parchment. Slice the sausage into coins and add it straight onto the pan with the gnocchi, plus any protein and veggies you have on hand. Spray with cooking oil, add balsamic vinegar, Dijon mustard, and sprinkle with garlic powder, rosemary, smoked paprika, salt, and black pepper. Toss everything together until evenly coated, then spread it into a single layer. Roast in the oven for 20–25 minutes, flipping once, until the vegetables are caramelized and the gnocchi is golden and crisp on the edges. As soon as it comes out, finish with nutritional yeast or parmesan before serving hot.
