
There was a sale where this was super cheap! With cold weather coming I thought soup would be great. Also wondering what others use or how they improve the soup? Just add more carrots and onions or are there any other unique things people do with carrot soup?

If I’m buying boxed soup, it’s because I want to do as little as possible additional work. Typically with these kinds of things I might just add some fresh lemon juice, vinegar, or hot sauce, olive oil, and cracked black pepper. Or I’ll use this as the flavor base for a canned white bean soup or something, with those other additives.
Homemade Croutons, fried parsnips, or pepitas are usually a different addition, then you could get some plant based creme & drizzle it in
I would add frozen udon noodles and top it with chili oil!
You could roast some cauliflower to throw on it or you could blend a quick cashew cream to stir in with some home made croutons. Sometimes leftover roasted veggies are a good way to spruce up a soup.
If I’m using a can or box of soup, it’s because I’m feeling lazy. I would probably just get some nice crusty French bread or sourdough to dunk in it.
I’ve had that soup, and it’s really good on its own. I just top with fresh herbs, olive oil, and eat with toast
You could use it as a sauce for pasta bake
Blend it with a block of tofu and call it a meal
Thicken it probably just reduce it a bit and add some curry seasonings make a tofu katsu or curry udon.
You could even just do a 50/50 mix of this and water and to cook rice.

What do you not like about it as it is? Just too bland? Or is some flavor in it that’s not working for you?
Id add lentils, mirepoix, and maybe wild rice
Line juice and chili oil or Sriracha
You could add lentils or beans for some protein! If you really want to liven it up you could sauté some onions, garlic or leeks until soft in a pot, add some herbs or curry powder, add your dry lentils to the pot, cover with veggie stock and cook until the lentils are soft then add in the box of soup and stir it all together. You’d get the protein and a flavour boost.

I would try mixing in some rice
Ginger carrot is a classic combination.
get some vegan sausage and slice/crumble then crisp it up amd add it to the soup.

I would add shredded fresh carrots and a can of chickpeas and a bag of baby spinach and simmer
Topped with scallions and chili flakes maybe needs more salt
Definitely have with some steamed herb potatoes or bread or crackers it’s not a sturdy meal from the box
I like pairing these blended soups with loaded toasts like bruschetta or garlic bread or sauteed white beans and greens on toast. The smooth soup and crunchy toast make a nice contrast and I can change up the type of toast to mix it up between meals.
I don’t want to cumin a carrot oatmilk soup…
Noodles. Noodles make any soup better
Coconut cream, and mixed veggies, plus either a wheat gluten protein, or solid veg like roasted cauliflower. Or tofu. Or all of the above.
