    Is there a practical difference between spatchcocking the turkey and cooking the legs and split breasts in pieces? Are the end results noticably different?

    I do this in my smoker for Thanksgiving every year now, it’s awesome. Especially with an aluminum tray full of veggies and the spine and gizzard catching the drippings for a jous

    This isn’t spatchcocked though. Spatchcock means butterflied, spine removed, and flattened.

    I’ve heard it cooks faster? We have been cooking our turkey upside down ( breast down). We saw it in a magazine once. It makes the breast a lot more juicy.

    Spatchcock is a cooking method where a whole bird, like a chicken or turkey, has its backbone removed and is then flattened to cook more evenly and quickly

    You did not do this.
