Simple Chicken with Edamame, Tofu, and Oyster Mushroom Stir Fry

    We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

    Did a rather simple stir fry for this weekend’s meal prep! No prepping garlic/ginger necessary for this Chinese recipe

    Preparation
    – Dice 1kg skinless chicken thigh into cubes and marinate/velvet in 2tbsp soy sauce, 2tbsp cornstarch, 2tbsp cooking wine, and a bit of baking soda
    – Dice 400g oyster mushrooms and 400g dried tofu
    – Prepare sauce of 1tbsp dark soy sauce, 1tbsp oyster sauce, 3 tbsp soy sauce, 4 tbsp cooking wine, 2 teaspoon sugar, .5 tsp chicken powder
    – DO NOT mix cornstarch with sauce, prepare slurry afterwards

    Cooking
    – Pan fry diced chicken for around five minutes and remove
    – Stir fry tofu for a couple of mins and remove
    – Stir fry edamame and mushrooms for few minutes, add the chicken and tofu back in and pour in sauce to taste while mixing
    – Add in cornstarch slurry to thicken sauce
