What is something that reminds you of summer?
For me, that would be asparagus. Growing up, my dad worked in New Jersey and he would
bring home pounds and pounds of fresh asparagus during the warmer months. We usually
like to sauté asparagus, but to change it up, I love making this creamy lemon asparagus pasta.
The sauce is a simple mixture of Greek yogurt, feta, lemon juice, fresh herbs,
and olive oil. It’s bright, fresh, and full of flavor. Then you simply just toss it
with sauteed fresh asparagus and pasta. It comes together in 25 minutes, makes a light yet
satisfying meal, and packs 20 g of protein. But you could also bump up the protein by using a
higher protein pasta or adding chicken or shrimp.
