The leaves look like arugula to me. Usually available at farmers market. They are a little spicy and bitter to the taste. Perhaps it was fried with a little onion and garlic. Or a salad with olive oil, garlic and onion. Tabouleh is usually made from parsley, onion, tomatoes, bulgar wheat ( crushed wheat) mint, salt and olive oil.

We have a vendor at local farmers market that sells Mediterranean foods and it kind of looks like the green shatta we had bought from him, but it’s hard to tell from the picture.
