I’d say this is more of a stew than a chili but whatever it is, it’s pretty tasty. I made some minor changes—adding more spice and a little tomato paste, cooking the zucchini with the stew instead of separately (which seemed like an unnecessary extra step) and adding a splash of lime juice at the end to give it some brightness. I would also probably add more lentils next time since 3 tablespoons hardly deserves top billing. With cilantro lime brown rice, a simple guac and a salad and fruit on the side. It’s a nice, quick meal for a weeknight and vegan as well if that’s your thing.
