If you’re Arab, you already know Kusam machi is elite. But sometimes you really just don’t want to sit and stuff a million pieces just to cut them open. So today, I’m sharing what I call lazy kusa. I don’t know if I’m damaging or helping my culture here, but this looks great. Oh my god, it’s so good. Everything you love about kusa mashi, just mish mashi. Start by cutting an X on the bottom of 10 tomatoes and soak them in boiling hot water for 10 minutes. While they soak, dice a yellow onion and grind lots of garlic into a paste. The tomato peels should come off super easy. Now, I’m using gray squash and cutting them into pieces about the same size as the tomato. Saute the diced onion and ghee for a few minutes. Add 1 and 12 lbs of ground beef and cook until the fat starts to render out. Season with salt and Arabic seven spice. Add the tomato and cover and simmer for 10 minutes. Then, mash the tomatoes up. Add tomato paste, water or stock, and the squash. Bring to a simmer. Cover and cook for 15 minutes. Finally, flash fry some garlic and a bit of ghee and drop right into the stew along with some dried mint. Plate with vermicelli rice and enjoy.

It's my favorite dish, you are helping your culture and sharing this amazing food. I found some times the ground meat stuffing was not cooking fast enough when I made in traditional way, so I started cutting the squash in half and adding meat balls mixed with rice and baking the whole dish , same ingredients 🤤❤

Gonna try it! I’ve never made Arabic food before so I had to order the spice on Amazon, but I just got a zucchini from the garden and tomatoes and I have everything else pretty much so gonna try it. Looks really good. Starting to like your stuff thanks for sharing!

I recommend you to try with Southeast Asian rice or Japanese Rice. I've tried with Vemicelli or Biryani type rice before. I think the taste is relatively a bland. But when i mix them with Southeast Asian Rice and Japanese Rice i bought from Asian store market it taste so good, there's a lot flavor that come out from them. Also you should put a MSG next time (just little bit a sprinkles at the end section when you're about to done cooking the stew)

I adore my mom’s food but that’s not how I labor for my family. So it is a dream to find recipes like this 😍 that low you to feed your loved ones really special food and spend the time saved in the kitchen having fun with them instead.
