    I’d wrap it up to protect it, place it in the fridge, happy to find yet another way to eat it the next morning. I love scrambled eggs with onions. 😋 😋 😋 😋 😋

    I would one up that with some fried eggs. Nothing like biting into a sanga like that and tasting some runny egg yolks with the onion, cheese, ham, tomatoes and lettuce. I’m a bit of a nutter at that time of the day.

    I always have some mince meat on hand for some impromptu smash burgers, with lots of onion.

    Toast two slices of whatever bread I have, fry up whatever lunch meat I have. Cut the onion, and if I have it, some dill pickle, tomato, and romaine lettuce.

    From top to bottom. Hefty amount of mustard on both sides of bread, fresh onion, fried lunch meat, more onion, lettuce, tomato, salt & pepper, even more onions. Dash of mayo. Sliced diagonally.
