INGREDIENTS:
1 onion
2 tbsp olive oil
1 carrot
1 egg
4 potatoes
268 ml (1 cup) diced tomatoes
1 bell pepper
Salt, black pepper
475 ml (2 cups) warm water or chicken stock
450 g (1 lb) ground beef
2 garlic cloves
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp meat seasoning

½ lb (225g) ground beef,
½ lb (225g) ground pork (or pork sausage). 1 egg. Salt & freshly ground black pepper. Today I’m sharing two cozy comfort food recipes you’ll never get enough of 😋. ¼ cup (30g) Italian breadcrumbs. 2 tbsp Fresh parsley, chopped. 1 tbsp chopped fresh oregano or 1/2 tsp dried. ½ cup (50g) grated Parmesan or Pecorino Romano cheese. Combine all meatball ingredients. Don’t overmix. Form into small bite-sized balls. 2 tbsp butter. 2 cloves garlic, sliced or minced. Sauté the garlic over medium heat for about 30 seconds, just until it releases its aroma. 1 medium onion, diced. Add the onion to the pan. 2 carrots. Add the carrots to the pan. 2 stalks celery. Add the celery to the pan. Season with salt and black pepper. If you’d like a touch of heat, sprinkle in ¼ tsp of red pepper flakes. Sauté for 4 to 5 minutes, until the vegetables are tender and fragrant. Add 1 bay leaf and 7 cups (1.65 L) of chicken broth or homemade stock if you have it. Bring to a gentle simmer. Add the meatballs. Optionally, brown the meatballs for extra flavor – but I like them unbrowned for a lighter soup 🤤. Simmer until meatballs are cooked through, about 7-10 minutes. Add ½ cup (about 90 g) small pasta, such as acini di pepe, orzo, or pastina. Cook the pasta for 2 minutes, then add the greens. Escarole is traditional, but spinach works too. Simmer 1 more minute until wilted. Adjust seasoning with salt and pepper, then stir in 1 tbsp Italian seasoning. Get ready for the second delicious and comforting recipe! 😋. mm…delicious 😋. 2 tbsp olive oil or something similar. 1 onion. Fry until translucent for 2-3 minutes over medium heat. 1 carrot. 1 bell pepper. Season with salt and pepper to taste. 1 cup (268 ml) of diced tomatoes. 4 potatoes. Put the potatoes in the sauce. 1 lb (450 g) ground beef. 1 egg. 2 cloves of garlic. 1/2 teaspoon salt. 1/4 tsp black pepper. 1/2 teaspoon meat seasoning. 2 cups (475 ml) of warm water or chicken broth. cover and cook over low heat for 20 minutes. few sprigs of parsley. open the lid and turn on medium heat. and cook for another 20 minutes. mm … this dish will keep you warm in the cold winter months 🥰. mm … delicious.   4. when I make meatballs for the soup, I drop them straight in a warm pot of water. That water I later use for the soup itself, no waste.
    and another suggestion: soups are always at their best the next day!

    BTW, I made this recipe but baked the meatballs a bit before they were placed in the soup. Gave it a bit of heaviness but not that fried oily heaviness

    This looks more like “Wedding Soup”
    With the Spinach & Pasta in there!!

  8. What pasta did you use? It’s in the thumbnail and you can see it when you stir at ~5:50, but you don’t film when you added it? Italian wedding soup usually uses Acini de Pepe or maybe couscous.

  9. Just a moment here, we sauté the garloc for 30 seconds… Adding over it the rest of the vegetables?? Wouldn't that cook the garlic more? As the hardy carrot begins to soften?
