I own a big pot like this and I hope we would always use it and fill it up with baked beans whenever we make baked beans because we have one day out of the year that we would make a bunch and just can them. I’m not going to make that many. I’m just going to use this thing and I’m going to make baked beans. First, we need to make sure these are sorted. So, there are no bad ones in here. These are just dry navy beans. I’m also making two batches. So, I have a whole pound of dry navy beans here instead of just half a pound. And you have to rinse them with cold water. After you have them rinsed, you need to boil them. And this Dutch oven is not big enough to boil them in. So, I’m just going to use this to bake them and this to boil them. We’re going to add a bunch of cold water to them. You need to cover them to boil them. And yes, these things are siblings. I just decided to use the smaller one because this one is too big. Once your beans have simmered for 2 minutes, we’re going to take them off the heat and let them sit in their hot water for a whole hour. Once your beans have been sitting for an hour, we’re going to take them and this time we need to rinse them again. And they have expanded quite a bit. So, I’m going to have to use my colander to rinse them. I love the smell of cooked navy beans and I love eating them just plain with some salt. When the Amish have church, they only have it every 2 weeks and they have it at their houses. So, everybody takes turn to have church at their houses and then whoever’s house it’s at has to make church lunch and it’s always the same lunch. They have church soup. I have that recipe in my cookbook and they add navy beans to their church soup. So, you always have boil a bunch of navy beans the day before church and it always smells so good. Now, just put them back in your container, whatever you’re using to boil them in. And we’re going to add more water. Then, just cover your container. We’re going to put them back on the stove to boil them until they’re tender this time. I have about 10 minutes before my beans are done. So, I’m going to get the stuff ready that we need to mix into them. First, we have some onions and I’m just going to chop them up in my chopper. I have my onions all chopped now. And I don’t know if you guys knew or not, but if you chew peppermint or spearmint gum while you’re cutting up your onions or working with onions, your eyes won’t water as much. We’re just going to cut up our bacon. And you don’t have to use bacon. I love mine with bacon, but you can make it without. And you can also use ham with the bacon or instead of the bacon. I have the bacon all chopped up. And my beans are done boiling. Now, take the lid off. Then you want to drain them. And you want to make sure you keep at least some of this water in case you need it. Once you have those things drained, you need to dump them into your Dutch oven or whatever you use in your baking. You can also use a roaster pan. Then it’s time to add the rest of our ingredients. I have maple syrup. You can use brown sugar, but the recipe recommends maple syrup for a reason. Add our bacon. We have just a little bit of mustard. And yes, this is of course homemade mustard. We have some barbecue sauce. I’m using homemade, but storebought works too. Our homemade ketchup. We add a little bit of pepper. The recipe recommends black pepper. I’m addicted to my white pepper, so that’s what I’m using. We’re going to add our salt and last our onions. Now, we just stir everything together in there. And we cover them and we stick them in the oven to slow bake them until they’re completely tender. And they might get stiff, which is why you need to save some of this water because if they get too stiff, you add a little bit of this water. You have to stir them every so often. I just pulled some of these beans out of the oven. You can see how much darker they are. It has been rainy and cloudy outside all day. It seems very much like fall. It is in the 70s in Texas and these beans just confirm that fall feeling. If there’s anything that makes you feel like fall, it’s making something in a Dutch oven. I’m going to spoon some out because I want to taste them right away. This is what they look like. They look really delicious. Let’s take a bite and see if they’re good. They’re phenomenal. They are so delicious. Fun fact, I did not like baked beans when I was a little girl. I hated them, but mom made me eat them every time and now I love them. There’s not much that I like more for a side dish than baked beans. So, homemade ones. I’m not a fan of store-bought ones. The way you never look away from the camera to what you're cooking is unnerving. Also you should do something about hte sound quality. Perhaps a microphone on the lapel rather than whatever you are using.
You can put your onion in the refrigerator for 10 minutes before cutting and that binds the chemical reaction that releases the compound that causes the tears. It works, just make sure if you are cutting many onions that you need to keep them cold until you actually need to cut them. β€
I use yellow eye beans. I soak them over night. And boil them untile you blow on them and the shell comes apart. Then they are ready. So I add onion brown sugar. Molasses. Mustard. And salt pork. And baked to are done. Yummy

When I was a kid in the 60s and 70s, my grandfather made baked beans. We had them with brown bread that came in a can. I loved that stuff! I can't find it in my area, but maybe someone else has had them.
In Georgia we add ground beef and call them cowboy beans π

As a New Englander who grew up on Boston Baked Beans, I approve. We use molasses and brown sugar here along with salt pork instead of bacon. But all of your ingredients are considered acceptable especially if you don't have the traditional stuff on hand.
