Sometimes I just cook some rice and put canned sardines over it as a quick, cheap and lazy meal. Because I always have rice and canned sardines at home.
Today I found fresh sardines for 50% off and decided to make the "upgraded" version.
Got two servings for as little as 3 euro.

# Recipe
Ingredients (I used):
6 fresh sardines
150 grams of rice
Scallions
Seasoning: 1 tablespoon of soy sauce
1: Cook your rice
2: Cook the sardines in a (grill)pan with some (olive) oil. Season straight away with some soy sauce.
3: Cut up a bit of green from your scallions.
4: Put your sardines over the rice, top with the scallions and a bit of oil from your pan.
Today, I became ill with jealousy that someone has access to some fresh sardines. I’m in the US middle, and have to travel days to get fresh sardines. But, weirdly enough, I have a tin of sardines on my counter for dinner tonight with a fresh vidalia onion. I will now get my rice cooker out.
Looks really good. Wish I had access to fresh sardines too.
If those were sprouts instead of scallions, you’d also be adding a lot of fresh nutrient dense vegetables for the same price or less.
