


Potato soup:
An amount of leftover potatoes, I think 3 cups. I used mash and scalloped potatoes
Chicken broth, enough to cover the potatoes
Cooked ham
Chive cream cheese, maybe a cup
Italian seasoning
Garlic powder
Salt and Pepper
Blend everything but the ham into the broth, heat on medium high and chop or tear up the ham and add it. Make sure it's heat through, taste to check the seasonings and serve.
Shepherds pie:
Mashed potatoes
Ground beef, browned
Canned or frozen corn
Frozen peas and carrots
Garlic or garlic powder
Onion soup mix
Beef broth
Cornstarch
Italian seasoning
Salt and pepper
Mix the ground beef with everything but the potatoes, put in bottom of baking dish and spread evenly. Add mashed potatoes on top and spread evenly. Score with fork for texture.
Bake at 350° for maybe 45 minutes to an hour. Check it with a meat thermometer to make sure it's done.
