Let’s make this delicious Moroccan inspired lentil and turmeric soup together. First, you need to get together a bunch of ingredients. We’ll go through this step by step. Shred up some carrots and then we’re going to chop up some celery and chop up some onions. Getting all of our veggies ready to go in the pot. Here, I’m grating some garlic and getting some oil going in the pot. Dropping in my onions. At this point, I like to add all my spices so that they can bloom in the oil. So, a bunch of turmeric and a bunch of black pepper and just start to get those onions cooked down and get those spices really fragrant. Next, I like to add my lentils. I like to add them at this step so they toast up a little bit before we put all the liquid in the pot and it gives them a more developed flavor. Then, we’re going to add in those celery pieces and carrots from earlier. Salt them up. The salt is going to help draw water out of the veggies, which is going to make more flavor in the soup. Right now, it looks like a lot of veggies, but the veggies shrink down and the lentils expand, so it will be more hearty by the end of it. As you can see, the lentils plump up in the stock. I’m going to add a big handful of kale. You could also use spinach. And at the very end, we’re going to splash in some lemon juice and some more cracked black pepper. Doesn’t that look delicious?
