Roasted Pepper Salad
Ingredients:
• 3 sweet bell peppers
• 50 g olives
• 1 red onion
• bunch of cilantro (or parsley)
• 2-3 tbsp cream cheese
• Olive oil for dressing
• salt to taste
Directions:
1. Roast the peppers at 200°C for 30-40 minutes.
2. Remove, let cool slightly, cover with plastic wrap or a lid, and let cool completely.
3. Peel the peppers and cut into strips.
4. Add chopped onion, herbs, garlic, cheese, salt, and oil and mix.
