Ingredients:
1/4 cup Olive Oil
1/4 cup Tahini
15 oz. Can of Chickpeas (Garbanzo Beans), drained
6 oz. Roasted Red Peppers
2 tsp Salt
1 tbsp Sugar
Zest and juice of 1 Lemon
1/4 cup Pine Nuts
Place all ingredients into a high-powered blender and blend until smooth. Garnish with a few additional toasted pine nuts. Serve with pita chips, fresh veggies or pretzel thins.

Here is my recipe for a simple and quick roasted red pepper and toasted pine nut hummus. You’re going to start with one 16oz can of garbanzo beans, drained, 6 oz of roasted red peppers. 1/4 cup of tahini paste, 1/4 cup of extra virgin olive oil, the zest and juice of one lemon, 2 tsp of salt, a tablespoon of sugar, and 1/4 cup of toasted pine nuts. Here, I reserved a couple to use for the garnish. Now, blend it up in a high-powered blender. A food processor also works well. Pour it into your serving dish. Garnish with those extra pine nuts and enjoy with pita chips or your favorite vegetables. Come back next week. I’ll show you another one.
