Spooky Macarons with whipped chocolate ganache and a soft caramel core
These were so much fun but boy I didn't know caramel was so difficult to make!

sorry about the ganache. I’ve had success recovering a split ganache by putting it over a double boiler until just the edges where it contacts the pan are melted, then putting it back in the mixer and whipping it for a while. It’s about returning the whole emulsion to the right temperature.
