It’s been a multi-step process, but the final part of Metro Vancouver’s new, three-in-one Italian eatery is officially set to open its doors next week.

Called Il Capello Enoteca, the flagship and first full-service restaurant from husband-and-wife duo Giancarlo and Daniela Cusano, is set to open on Oct. 21, 2025.

The 2,000 sq. ft. restaurant will feature seating for 100 guests across an intimate dining room and an enclosed year-round patio. The space is designed to feel refined yet relaxed, where guests are invited to metti giù il cappello, sei a casa (lay down your hat, you’re home), which Il Cappello Enoteca calls “true Italian fashion.”

“Il Cappello is truly the ‘hat’ of Dolce Amore, the finishing touch, and we couldn’t be more excited to finally host guests in our restaurant space,” explained Giancarlo and Daniela.
“Just like our gelato shop and caffetteria, this restaurant is a reflection of our family’s love for authentic and warm Italian hospitality. We want the community to bring their friends, loved ones, and families to dine with us.”

The restaurant is led by the legendary culinary director, Chef Pino Posteraro (previously Cippino’s Mediterranean Grill), and Sicilian-born head chef Daniele Navarria, who has previously worked at some of the U.K.’s most prestigious restaurants, including The Clove Club and Le Gavroche.

“We are thrilled to have Chef Daniele join our culinary team as head chef,” added Giancarlo
and Daniela. “He grew up in a family of chefs – his grandfather was a pastaio. He knows exactly what true Italian hospitality is. We can already see him doing great things with Chef Pino right now. The menu is excellent.”

At Il Cappello Enoteca, the menu is guided by a classic progression of Italian dining — antipasti, primi piatti (first course/pasta and risotto), pizza, piatti principali (main course), and dolce (dessert).

Highlights include Burrata Pugliese with Sicilian-style orange salad and peperoncino; pasta and risotto dishes like the Tonnarelli “Cacio e Pepe” with toasted black pepper and Pecorino Romano; Neapolitan-style pizza favourites like Margherita Clasica with fiordilatte and San Marzano DOP tomatoes; and Parmigiana featuring eggplant caponata, fiordilatte, and Parmigiano Reggiano.

Main courses will include Pescato del Giorno (catch of the day) with Castelvetrano olives and cherry tomatoes, Polpette della Nonna (traditional meatballs in a spicy tomato sauce), and a Veal Porterhouse, which is flame-grilled with roasted garlic and rosemary sauce.

As for dessert, you’ll find a daily seasonal selection of gelato or sorbetto alongside classic Italian desserts revisited in a modern way.

The front-of-house is led by general manager and sommelier Vincent Massiot (previously Cioppino’s). As for the wine program, expect mostly Italian wines, with some from B.C. and other select regions. Highlights include Poggio Torselli, a historic vineyard in Tuscany, and wines from Indigenous grape varietals that have been brought back to life in recent years.

Il Cappello Enoteca officially opens on Oct. 21, 2025, with a few soft opening dates beforehand. Once open, you can visit Tuesday to Saturday, from 5 p.m. to late. Reservations can be made online.
