Many ways to do this; here's how I do it:
1. Brown onions, carrots, and garlic.
2. Add curry (I prefer thai curry paste but regular curry powder works).
3. Add one cup of dry lentils, a 28 oz can of tomatoes, and two cups of stock (or water).
3. Bring to a boil, lower heat, and cover; simmer for 45 min or until lentils and carrots are soft.
4. Add a can of regular coconut milk and simmer for another 10-20 minutes or so; add chopped cilantro.
