Blu on the Hudson is a restaurant in Weehawken, New Jersey, and it fuses elements of American, Mediterranean and Japanese cuisines. This journalist had a chance to dine on Wednesday, October 15th.

Seafood

Their “Oysters Rockefeller” were quite the spectacle. They consisted of oysters in a half-shell topped with a rich sauce, as well as herbs and breadcrumbs, and were served with a lemon wedge.

Their specialty sushi rolls were impressive. These included the “Lincoln Harbor Roll,” which is made up of blue-fin tuna, spicy king crab, avocado and wasabi-yuzu, as well as the “Weehawken Roll,” which features spicy hamachi, scallops and ichimi potato crunch. It has some of the best sushi rolls one can taste on the East Coast.

Speaking of sushi, their “Nori Tacos” were savory and crispy. They consisted of salmon and ikura, blue-fun tune and spicy aioli sauce, along with hamachi and avocado and wagyu.

Equally noteworthy were their delicate jumbo crab cakes.

Pasta

At Blu on the Hudson, their pasta is “homemade,” and their “Ricotta Tortellini” does not disappoint. The dish includes shaved summer truffles, peas, and their crunchy wagyu bacon.

Steak

Their “Prime Delmonico” with truffle butter was rich and flavorful; moreover, Their “Crispy Cauliflower” is the quintessential side dish for any entrée (with a side of spicy avocado aïoli).

Desserts

The desserts at Blu on the Hudson are always a sight to behold, compliments to pastry chef Erika Martinez.

Their “Classic Carrot Cake” was tangy and rich, featuring cream cheese mousse, as well as a side of candied pecans and butterscotch sauce.

“Blu’s Tiramisu,” which was comprised of house-made ladyfingers, marscarpone cream, and valrhona chocolate shavings was creamy and savory; moreover, it’s the ideal pastry to celebrate any unique occasion.

Former boxing heavyweight champion, model, and social influencer Rudy Bundini remarked, “The restaurant’s waterfront location offers an amazing view of the Manhattan skyline and it set the perfect stage for an evening defined by elegance and exceptional service.”

Rudy Bundini continued, “I loved the atmosphere, attentive staff, and masterfully prepared dishes that showcase creativity and quality. From start to finish, the dining experience captured the essence of modern fine dining… it was sophisticated, tasty, and unforgettable.”

The Verdict

Overall, Blu on the Hudson is an incredible and highly eclectic eatery in the heart of Weehawken, New Jersey.

The wait staff is highly professional and attentive, the food is top-notch, and the views of the New York City skyline (from across the Hudson River) are breathtaking.

There is always something new to try at each visit due to its elaborate menu of offerings, and it is ideal for the whole family.

It is highly recommended that one checks out Blu on the Hudson, and it garners five out of five stars.
