    Matcha Ice Cream

    1 cup milk

    2 cups cream

    3/4 cup sugar

    1/8^(th) teaspoon cellulose gum

    ¼ c matcha powder (I used culinary grade)

    1/3 cup egg yolk powder

    Pinch salt

    1 tsp vanilla

     

     

    Warm milk and dissolve sugar, let cool. Mix everything in a blender; I had to use an immersion blender. Put into the machine and set for ice cream, I used a compressor style, and it took 45 minutes. I put them in 8-oz paper cups to share with other people.

    Interesting recipe. Why use yolk powder and not fresh yolks?
