Greek traditional tsoureki for easter!!!
Hi everyone. Today we’re going to make the perfect surki for Easter. It’s fluffy, slightly sweet, and beautifully braided. For the ingredients, we’ll need four cups of all-purpose flour, 2 and 1/4 tesps of dry yeast, half a cup of warm milk, half a cup of sugar, two eggs, one egg yolk for brushing, 1/4 cup of softened butter, 1 teaspoon of vanilla extract, and the zest of one orange. Optionally, half a teaspoon of malab and 1/4 teaspoon of mastic for an authentic flavor. For the preparation, mix the warm milk with the yeast and 1 tbsp of sugar. Let it sit for 10 minutes until it gets foamy. In a large bowl, combine the flour, sugar, orange zest, vanilla, and the optional spices. Add the yeast mixture and the eggs. Knead until a soft dough forms. Gradually add the softened butter while kneading until it’s fully absorbed and the dough becomes elastic and smooth. Cover and let the dough rise in a warm place until it doubles in size, about 1 and 1/2 to 2 hours. Divide the dough into three equal pieces. Roll them into ropes and braid. Place the braid on a baking sheet lined with parchment paper. Let it rise again for 30 to 45 minutes. Brush with egg yolk and bake in a preheated oven at 350° F for 30 to 35 minutes until golden brown. Let it cool before slicing. Optionally, add sesame seeds or slivered almonds on top before baking.
