    They are boney. Great fried. I’ve baked them, taken the meat off the bone, and made fish cakes.

    Pan fried with tail on. Shorelunch cornmeal is my favorite.

    Gut them, scale them, remove the head, dip them in a dark beer, dredge in a mixture of flour and cornmeal, do this one more time, drop in the deep fryer for 3 to 4 minutes.

    Descale, 3 slits on each end and fry them a little salt. Enjoy!

    Filet them, clean the filets, soak in salt water, dredge in Andys Yellow & Red batter, Deep fry & enjoy w/ hot sauce or tartar sauce, potato salad, hush puppies & baked beans!

    Whatever you do, soak the fillets in buttermilk overnight in the fridge
