A new culinary destination is coming to St. Petersburg this winter: Luma, a Mediterranean-inspired restaurant. It will open in December at SkyBeach Resort, 6800 Sunshine Skyway Lane S. Located just off the resort’s main lobby, Luma brings coastal flavors and Mediterranean flair to one of St. Pete’s most scenic waterfront settings.

The name Luma, derived from “lumen,” meaning light, reflects the restaurant’s inspiration from the Gulf Coast’s natural beauty, “where the golden St. Petersburg sun meets the timeless warmth of Mediterranean dining,” according to a press release.

Luma will be St. Pete’s hot new restaurant this winter
Luma’s menu will highlight fresh, locally inspired ingredients through a mix of shared plates and entrées. Standout dishes include Grouper Gone Bananas, a black grouper tiradito with coconut essence, lime, sweet potato, and banana chutney made from SkyBeach-grown bananas; Guava BBQ Lamb Ribs paired with napa cabbage slaw; and Braised Boneless Short Ribs with olive-garlic mash, harissa aioli, and blistered tomatoes.
Guests can also look forward to inventive craft cocktails such as The Sultan’s Sip, made with bourbon, date syrup, saffron, and cardamom bitters, and the Casablanca Cooler, featuring vodka, Moroccan mint tea, lemon juice, and honey.
Designed by owner Ben Willner, Luma’s aesthetic blends modern coastal luxury with nostalgic charm. The space evokes the feel of a 1950s seaside lounge meets an art deco garden party, overlooking SkyBeach Resort’s newly renovated marina. The restaurant aims to serve as a lively social hub for locals and travelers alike.

A third dining concept at the SkyBeach Resort
Luma will be the third dining concept to debut at SkyBeach Resort since its acquisition and renovation by Willner Realty and Development Company (WRDC). The resort reopened in July 2024 with 113 redesigned guest rooms, upgraded amenities, and new additions, including a reimagined lobby and a 6,260-square-foot event center. Earlier this year, SkyBeach introduced Paradeco Coffee Roasters, the beloved St. Pete café’s second location, and SkyBar + Grille, a two-story open-air bar and restaurant.
When it opens this December, Luma will complete SkyBeach’s lineup of dining experiences—offering locals another reason to explore one of St. Pete’s most exciting waterfront destinations.
