Hello everybody. Today I’m going to show you guys how to make an Italian calamari salad. This is one of my favorite salads. It’s really easy to make and it’s delicious. So let’s get started. To make this recipe, you’re going to need a large pot of boiling water, one pound of calamari, cleaned and chopped, 1/2 cup of cherry tomatoes, 14 cup of red onion, dly 14 cup of black olives, sliced, 14 cup of capers, drained, 14 cup of fresh parsley, chopped, three cloves of garlic, minced, one lemon, 2 tablespoons of olive oil, salt, and pepper to taste. Now, first thing you want to do is add your chopped calamary to the boiling water and cook for 2 to 3 minutes or until it has tender. You don’t want to overcook it or else it’s going to be tough and chewy. So, once it’s cooked, just go ahead and drain it and then add it to a bowl. Next, add in your cherry tomatoes, red onion, black olives, and capers. Now, to make the dressing, you’re going to mix together the olive oil, garlic, and lemon juice in a small bowl. Season with salt and pepper to taste and then pour it over the calamari and the vegetables. Then add in your parsley and toss it all together. Now, this salad is great on its own, but if you want to make it a complete meal, you can add grilled chicken or shrimp. Just top it with your favorite dressing and serve. This salad is perfect for a light lunch or dinner. It’s really refreshing and it has a nice balance of flavors and textures. The calamari is tender and juicy.
