I need to give this a whirl, but I’m not about to throw 6-8 splits on the offset just to smoke a $4-5 Red Baron pizza at 400+, ya know? Spend more on the wood than the pizza, LOL…
Maybe at the start of my next big cook, I’ll try the pizza at the start when making the coal bed.

Just going to put this out there. It is much better to smoke up some mozzarella cheese, then use that to make a ‘smoked pizza’ than it is actually smoke a pizza. I love making homemade pizza in my pizza oven, and smoking the cheese is all you really need to do.
