What’s beef tajine? Stop staring blankly at your spice cabinet and go make this. Tajine is truly one of the most aromatic and flavorful brazes currently available to humankind. And I’m willing to fight about that. Due to the large Moroccan population in the south of France, I’ve grown incredibly sentimental about this dish. Due to having Moroccan family members who have cooked it for me with beef or lamb, chicken, whatever, at least once during every trip there to see my family. Just like the Moroccan people, the warmth of the spices in this dish are immensely comforting. That is not to overlook the fork tender, deeply rich flavor that comes with the roasted beef and then the sweet prunes as a contrast that are brazed alongside it. Ideally, this is served over super fluffy couscous. That’s a pretty tricky thing to do, but I’m working my way towards it. Baby, baby.
