My husband spoiled me for my birthday this past weekend and he got me a rotisserie and grill basket to go with my new Searwood.

Tossed these in a homemade rub and smoked them at 350 and then 425 to hopefully crisp up the skin a bit.

The skin didn’t turn out crisp, but it was definitely not rubbery or chewy like I’ve done in the past, lol.

    Why not just cook them on the grate?

    Olive oil will do the trick to crispen them up. I’ve done 5-6 batches with the rotisserie on my Searwood. Forgot the olive oil once and wings weren’t crispy.

    Try using rumford baking powder. It’s great to help dry the skin out and make it crispy.

    Add high smoke point oil in the beginning, don’t season, add to basket and rotisserie, run at 400 until molasses color all the way around. Pull and season immediately. They will be awesome.
