First time smoking a brisket on my new 22! 10lb from Costco trimmed down, Diamond kosher and coarse hand ground pepper only, no binder. 2×1 snake method for a steady 225-250, which timed out perfectly – it died about 20 minutes after I pulled the brisket off the grill. Started at 9:30am, came off the kettle about 6pm and rested in a cold oven til 8pm for dinner.
Holy hell I cook a lot and this is easily top 3 best things I've ever made! Super tender and juicy, fat rendered down to Jell-O texture, smoky without being overpowering. Didn't even need a BBQ sauce drizzle. Served with blackened onion, pinto beans, potato salad, jalapeno cheddar bread, and triple creme brie (couldn't find any cambozola sadly.)

    I’ve been wanting to try this with my kettle. Beautiful smoke ring! Looks good, especially for a first cook. Keep doing your thing!
