    Yes, same way that prime rib counts. I prefer Picanha though. You still get some fat, but I prefer the rendered cap, vs the un-rendered fat inside a rib roast.

    This looks absolutely amazing!!! I’ve done the rolled picanha, but haven’t done it this way. It looks perfectly med rare the entire way through. You gotta post your exact method, my man!!!!

    I’ve done a few picanha roasts for family dinners the only difference is the initial cut prior to cooking, and honestly, cooking a whole roast is the better way to go for smaller initial roasts, which tend to be more common now a days, bigger roasts after you get through the fat cap are better for steaks, but that’s a gamble
