


First cook on the egg! Did salmon using the Forks & Embers recipe, which is great. Getting used to temperature control. Not as much smoke flavor. Probably should use bigger chunks next time as I used some of the smaller pieces in the bag mixed through out the charcoal. Still came out great!

For salmon I love to lay a bed of thin sliced citrus on the grate and lay the salmon on top of that. It helps with temperature regulation and adds some nice flavor
