This dark chocolate bark with goat cheese is a hitter around this time of year. For some reason, dates have a moment like cauliflower has every summer. One of my most popular recipes are these baked stuffed dates with goat cheese, herbs, and honey. Everyone goes crazy for these. So, instead of making the popular date Snickers, I turn these into chocolate bark. This works because the goat cheese contrasts well with the bitter sweetness of dark chocolate. Spread out pitted dates on a baking sheet. Bake for 10 minutes at 400 to make them gooey and help the bark stay together. Smash them down while they’re still hot. Then I place them in the freezer to completely cool. Goat cheese crumble works best to ensure every bite has a little bit of goat cheese. I drizzle with nut butter. I use walnut butter. And then I top it with some dark chocolate. And don’t you dare forget that sea salt. Store in the freezer for a few hours, then break it into pieces.
