Ingredients (serves 3–4):
• 250g minced lamb / beef / chicken
• 1 medium white onion, finely chopped
• 1 small red sweet chili (or red pepper), finely chopped
• 2–3 garlic pods, minced
• Handful fresh parsley, chopped (excess water squeezed out)
• 1 tsp paprika
• 1 tsp cumin powder
• ½ tsp black pepper
• 1 tsp salt (adjust to taste)
• 1 tbsp lemon juice
• 1 tbsp tomato paste (optional)
• 1 tbsp olive oil
• 3–4 pita breads (khaboos), split into two layers

For Yogurt Dip:
• ½ cup yogurt
• 1 tbsp tahini
• 1 tsp lemon juice
• Pinch black pepper
• Salt to taste

Toppings (optional but yum):
• Sliced onions, parsley & tomato salad
• Pickles

Method:
1. In a bowl, mix minced meat with onion, chili, garlic, parsley, spices, lemon juice, tomato paste (if using), and olive oil. Combine well.
2. Separate pita bread into two thin layers. Spread a thin layer of the meat mixture evenly on each.
3. Heat a pan with a little oil and cook the pita, meat side down first. Flip and cook the other side until golden and cooked through.
4. Serve hot with yogurt-tahini dip, fresh salad, and pickles.
