Interesting dishes, with great history behind some of them.
1. Rich foie with a nice sweetness from the fig. Meringue base, lovely plum flavour yet still savoury. Creamy, slightly savoury, spinach at the bottom with a few smoked almonds
2. Padgett's farm carrot, miso, passion fruit and hemp seed. This was a substitution from their other menu, in place of the caviar and mushroom dish. Passionfruit added sweetness to the carrot, miso balanced it nicely.
3. Light fresh fish, added fish from the jelly, nice subtle ginger heat, rice was good and added sweetness from the apple
4. Lovely bread, nice sweetness. Softly smoked salmon, nice bit from the potato salad, spiced cream cheese. Lovely course with a great story behind it
5. Perfectly cooked halibut, dashing and elderflower added sweetness. Salsify and razor claims nicely cooked
6. Lovely sweet scallop, leek and lobster terrine, slight spice, truffle and yuzu worked wonderfully. Another great course
7. Chicken and prawn mousse worked well, depth of flavour in the jus was immense. Pineapple and chutney added sweetness. Leg meat in the bowl, was nice but a bit subdued in flavour
8. Light and fresh, nice mint flavour from the shiso
9. Lovely pear flavour from the compote filling, white chocolate mousse was light. Madeline was soft, flavourful
This was my second fine dining meal in the Bournemouth area. Both with nice, with a couple of stand out dishes, but missed the consistency you see at higher rated places. Still worth a visit.
