One cup of red lentils. Half a cup of chickpeas soaked overnight. One medium onion finely chopped. Two celery stalks chopped. Two fresh tomatoes blended until smooth. 1/4 cup of fresh parsley, chopped. 1/4 cup of fresh coriander, chopped. One teaspoon of turmeric powder. One teaspoon of ground cinnamon. One teaspoon of ground ginger. One teaspoon of black pepper. Salt to taste. 2 tbspoons of olive oil. 1 and 1/2 L of water or broth. Optional, 1/4 cup of vermicelli to thicken. 2 tablespoons of flour mixed with water. Gather all these fresh ingredients and we’ll start cooking this hearty Moroccan classic. Heat olive oil in a large pot. Add onions and celery. Sauté until soft. Add cubed meat, turmeric, cinnamon, ginger, black pepper, and salt. Cook for 5 minutes until brown. Stir in blended tomatoes, parsley, and coriander. Cook for 5 more minutes. Add lentils, soaked chickpeas, and water or broth. Bring to a boil, then simmer for 4550 minutes.
