A simple, healthy, and refreshing avocado salad 🥑✨ Fresh veggies, creamy avocado, and a zesty touch of lemon make this salad light, vibrant, and absolutely delicious! Perfect as a quick lunch or a side dish for any meal.

Ingredients:
2 ripe avocados
Juice of ½ fresh lemon
½ red onion
2 Persian cucumbers
2 medium tomatoes
½ cup corn
Salt and black pepper to taste
50 g fresh parsley and coriander,
(finely chopped)
Olive oil as needed

Instructions:
1. Peel, remove the pit, and chop the avocados. Add the lemon juice and toss gently to prevent browning.
2. Finely chop the red onion, cucumbers, and tomatoes, then add them to a large bowl.
3. Add the corn, season with salt and black pepper, and drizzle with olive oil.
4. Toss everything together until well mixed. Adjust seasoning to your taste.
Tip:
If you want to chill the salad or keep it for later, cover the surface tightly with plastic wrap to prevent the avocado from browning.
