📋 INGREDIENTS:
• 800 g potatoes (5 1/2 cups)
• 1 broccoli (approx. 400 g (4 cups)), in florets
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 2 tbsp vegetable oil
• 300 ml vegetable broth (1 1/4 cups)
• 200 ml plant-based cream (3/4 cup, e.g., oat or soy cream)
• 2 tbsp nutritional yeast
• 1 tsp mustard
• 1/2 tsp nutmeg
• Salt, pepper
• 2 tbsp breadcrumbs
• 1 tbsp vegetable oil

800 g potatoes (5 ½ cups). Pre-cook them in lightly salted water for about twelve minutes until they are almost cooked. 1 broccoli (approx. 400 g (4 cups)), in florets. Place the broccoli florets in cold water, bring to the boil and cook for about three minutes. Then drain and set aside. 1 onion and 2 cloves of garlic. Drain the potatoes and set aside, as well as the broccoli. Heat two tbsps of vegetable oil in a pan. Fry the onion and garlic until translucent. 1 tsp mustard. 300 ml vegetable stock (1 ¼ cups). 200 ml plant-based cream (¾ cup, e.g. oat or soy cream). 2 tbsps of yeast flakes. ½ tsp nutmeg. Salt, pepper. Bring the sauce to the boil briefly, stirring until it becomes creamy but not too thick. 2 tbsps breadcrumbs. 1 tbsp vegetable oil. Bake in the oven at 200 °C top/bottom heat (180 °C fan oven) for 20-25 minutes until golden brown. Are you looking for a special gift?     So I say thank you and I’m not even a vegan!! While my wee pantry never has all the ingredients you inspire me to go-google and work out what is a substitute. E.G. yeast flakes being swapped out for something else.
