You’ll learn the traditional steps to create a truly authentic Harrier, ensuring a delicious and satisfying meal for your family and friends. Get ready to transform simple ingredients into a culinary masterpiece. Let’s start with the foundation of our harira, the ingredients. For a rich base, you’ll need one cup of brown or green lentils, thoroughly rinsed. Don’t forget one cup of chickpeas, which you can soak overnight or use pre-cooked for convenience. We’ll also use two large onions and three cloves of garlic, finely diced, along with 400 g of chopped ripe tomatoes or a can of crushed tomatoes to build that vibrant flavor profile. Now, let’s get cooking. Begin by sautéing your diced onions and garlic in a generous splash of olive oil until they become fragrant and translucent. Next, incorporate the chopped tomatoes, lentils, chickpeas, and about one liter of water. This is also the perfect time to introduce our aromatic spices. One teaspoon each of turmeric, ground ginger, and cinnamon. Let this mixture simmer gently for 45 minutes, allowing the flavors to melt beautifully before adding fresh herbs. For that signature harrier consistency, we’ll create a tadiraa. This is a simple mixture of 2 tablespoons of flour and about 100 ml of water whisked until smooth. Slowly pour this into your simmering soup, stirring continuously to prevent lumps. Continue to cook for another 10 minutes, allowing the soup to thicken beautifully.
