
I don't know who else likes Mentaiko but this is one of my favorite things to make. I mainly have it on a toasted baguette but it's great for making a quick cream sauce for pasta too.

mentaiko is the seasoned roe (eggs) of the Alaska pollock, which is a cod-like fish. The plain version’s called tarako, but once it’s marinated in chili, salt, and sake it becomes mentaiko that spicy, savory stuff you see on rice, pasta, or in onigiri. Basically, it’s fish eggs with attitude.
