Ingredients:
1 cup raw chickpeas (wash 3 times, soak overnight — it will double in size)
1 onion, diced
3 carrots, diced
2 zucchini, diced
1 bunch spinach, chopped
2 tomatoes, blended
½ tsp turmeric powder
1 tbsp cumin-coriander powder
1 tbsp harissa seasoning
Salt to taste
Water as needed
1 tbsp olive oil (add at the end)

Instructions (Beginner-Friendly):
1️⃣ Wash chickpeas 3 times, soak overnight with 5 cups water.
2️⃣ In a large pot, add chickpeas with same water. Boil vigorously for 10 minutes, skimming the foam that forms on top.
3️⃣ Now close the flame after 10 minutes
4️⃣ In another pan, add all chopped vegetables (onion, carrot, zucchini, spinach) with spices — turmeric, cumin-coriander, harissa, and salt. sautee 2-3 minutes on medium flame
5️⃣ Add blended tomatoes, mix well.
6️⃣ Add cooked chickpeas with same waterto the pan. Stir, cover, and cook on low flame for 50-60 minutes until thick and aromatic.
7️⃣ Finish with olive oil and a sprinkle of red pepper flakes. Serve warm.
