I made these guys for a coffee date with the neighborhood ladies. They’re filled with vanilla mascarpone diplomat cream and jammy elderflower-pear compote. Each is perched on a hazelnut pate sucrée cookie.

    I’m in catering college atm and we have to make these at some stage. I’ve made choux buns before but never swans.

    Omg this just unlocked a core memory as a kid. A bakery that’s been closed down for some time now used to make swan cream puffs. They were delicious, I think about them often. Thank you for sharing, yours are absolutely gorgeous!!
