Hi friends!
This week’s dinners have been a little less exciting, as we did have leftovers for a few nights, have a crazy-hyper puppy, and had a freezer outage we need fixed (it’s happening this week!) Still doing my best to put nice meals on the table for my family.
First two photos are of a Reverse-Seared Ribeye, served with Kale Caesar Salad and Roasted Brussels Sprouts. My mother was kind enough to gift us a 2 lb ribeye, which I cooked to medium-rare and it was succulent and delicious. I am trying to eat a higher variety of vegetables so that’s where the Kale came in, and I have a bunch leftover which I want to use to make a pesto.
Third photo is of a really fun dinner where I was inspired to use up leftovers in my fridge, as I am trying to stick to a grocery budget and hate wasting food. I made chicken cutlets, and made homemade breadcrumbs using a half-loaf of leftover bread that I baked a few days prior. I seasoned them, italian style and they were quite tasty. I’m using the rest of the breadcrumbs for some meatballs which I’m making tomorrow (prepped em tonight). The pasta is a Roasted-Tomato Sauce with fresh ricotta, again I had a bunch of cherry tomatoes on their last leg. I roasted them with olive oil, garlic, basil, oregano, and brown sugar then mashed them up and tossed some cooked spaghetti with that + some dollops of ricotta cheese. Fabulous meal.
Fourth picture is an air-fryer meal, I made buffalo-chicken bites with blue cheese. It was so tasty and the chicken was real crispy. I did not make any sides as my partner had already eaten. He did end up trying this and said he would like it as a meal one night, as he really enjoyed it!
Fifth picture is a Roast Chicken meal, with garlic-parmesan potatoes and more Brussels sprouts (can you tell my fiancรฉ loves them?). I marinated two chicken halves in a citrus marinade (inspired from Alison Roman) and it came out great. Also used up a bird that had been sitting in the freezer for awhile.
Sixth picture is just Steak Bites over Arugula with Balsamic. Simple and yummy. Final pic is my adorable Dachshund- this week she learned how to beg for snacks. ๐ have a great week!!
