Got about 7 ounces of extra firm tofu. Mashed it up a bit in a bowl and added garlic seasoning, tumeric and nutritional yeast. Sautéed white button mushrooms, sweet peppers, sweet onions and tomatoes. Then added it all together.

    My favorite thing is to do this, oven roast some potatoes, then throw it in a tortilla with guac and baby spinach and hot sauce. Incredible veg breakfast burrito.
