Here is the classic Italian pie that everyone loves, tota de laona. Let’s start with the dough. I’m using a food processor to make things quick, but you can also do it by hand. Add flour, sugar, and lemon zest. Then cold butter cut into cubes. Pulse until crumbly. Add vanilla and eggs. Shape into two discs and refrigerate. Now for the Italian custard, warm the milk with lemon peel for flavor. And in a separate saucepan, whisk together sugar, flour, cornstarch, and egg yolks. Slowly add the warm milk, whisking constantly. Bring to a simmer and cook until thick and smooth. Pour into a bowl. Cover and let it cool. Now roll out one dis of dough and transfer it to a buttered and fled tart pan. Trim the edges. Prick the bottom. Spread the cool custard and cover with the second sheet of dough. Trim, seal, and prick the top. Brush with milk and sprinkle with pine nuts. Bake for about 45 minutes until golden. Make sure to cool completely. Refrigerate. Dust with powdered sugar. Splice and enjoy.
