Damn this YouTube clickhole algorithm bait and why do I get so much energy after midnight (it's not coke)

I didn't even know tahini was just toasted sesame seeds, oil, and salt in a food processor. I have a whole bunch of sesame seeds bc my senior citizen neighbor leaves whatever she can't use from the food bank as fair game in the lobby to whoever wants it.

So I whipped up tahini, set aside. Simmered chickpeas on the stove w baking powder and water.

Meanwhile let's rewind to last night (also tipsy) trying to make focaccia. I'm def more cook than baker but I'm trying my best

Recipe calls for instant yeast, water, salt, flour. Only have dry active yeast. Apparently it's a misconception yeast needs sugar btw. But also since it's dry active I put it in lukewarm water first. Doesn't seem to foam. I do a second packet with warmer water. Foams sort of. I go with it. Mix the slop together, oil it up, plastic wrapped in the fridge for the next 18 hours (yesterday)

Sober earlier, leave the bread mix to grow in a greased pan (glass, not ideal), for 3 hours. Also should note I used black lava salt bc why not I have a free surplus, so when I saw the dough it looked kind of booty from the black salt. Very wet too

Where am I in the story. I can also just delete this text later. But now I'm doing the final edit and I decide to leave it in for the creative process.

Oh yeah, drain the chickpeas, put in a food processor FOREVER with lemon juice and (probably too much) garlic. Forever being like 7-8 minutes. Add some oil. Add some crushed ice to fluff it up. More time and add the tahini. I'm afraid my $8 food processor will catch fire.

Focaccia is baking at 425 for about 25 min. Slides out ok but there's no big air pockets, idgaf now baking stresses me out but it's still legally bread. A touch dry. I won't make the British baking show anytime soon. But it's bread and salted and oiled enough to be a good time

About to combine the two and have a scathing, critical, internal review how it could been improved next time.
