We moved this month, and bringing the old, worn-out big box smokers with us didn't make any sense. Good excuse for a new one! I went with the Old Country Gravity Fed smoker, and am using a FB2 Pro with the G3 fan to do temperature control. So far… really good results on the technical side. No door leakage, smoke is very clean after initial start-up, and it's doing an awesome job with temperature maintenance. I'm doing an initial high temp burn-in (425f) to clear out any remaining grease, and then I'll get down to doing some food this week. Nice to be back in the smoking game!

You’re gonna be really happy with this rig. I’ve been running mine for 2 years and absolutely love it.

Experiment with alternating hardwood charcoal and wood chunk layers in the chute to find the balance of smoke, temp consistency, and fuel cost you like.

What type of smoker is this? Pellet, charcoal?

Nice setup. How do you regulate the temperature? Drop more coals/wood to increase the temp?

Solid. Gravity feds are my favorite cook on save for offsets.

That’s my end game smoker right there. What’s going on first after the burn in?

If I see my neighbor roll this out on a Sunday I am showing up with my whole family and a bottle of wine to introduce myself and let you know I like smoked meats.
