Once it occurred to me that I might be able to shape the yolk mixture into devil faces for making deviled eggs, I just had to. I added some chili oil to the usual filling along with a couple drops of red food gel color. A little gel color goes a long way and thankfully doesn’t affect the taste. I froze the yolk mixture in a silicone mold and kept the faces frozen until serving (and kept the whites covered in the fridge). Just before serving, I dipped the tops of the whites in a charcoal onion ash mix though coloring the whites with dye could work too. Just a note that if anyone wants to try this be aware charcoal can absorb medications. The yolk faces thaw quickly and can collapse into the egg hollow so it also helps to fill the whites with a bit of unshaped yolk mix first. I also put a bit of dry ice around the serving area for a smoke effect.
