I ate almost half of the pan by myself. The last time I made this, it just hits all the right notes. It’s so good. You start with shallots, garlic, a little tomato paste, and a can of chickpeas. Once that’s nice and roasty toasty, you can add your orzo and your broth. Let it simmer with some thyme sprigs. I really love thyme, so I add a lot of it. At this point, you can add some cream. And then I feel like you actually have options when it comes to the sun-dried tomatoes. I actually prefer something else besides sun-dried tomatoes. This is the tomato bruschetta from Dalo. You could add Calabrian chilies. You could add roasted tomatoes. I don’t think you can go wrong. It is so good at this point. Just get it into bowls. Get some parmesan on top.
