A prolific Eastern Shore restaurant group has turned an Easton bistro into an Italian restaurant.

The Wardroom, located at 103 N. Washington St., officially reopened on Friday, according to an Oct. 2 news release from the restaurant. The mid-19th-century building, which formerly housed The Brick Hotel, now boasts a concept operated by Bluepoint Hospitality Group and helmed by 2024 James Beard Award-winning chef Harley Peet and chef de cuisine Jesse Wheeler.

The menu, which has previously boasted French-style omelets and baked goods, will now focus on “dishes that embody the convivial spirit of Italian dining,” according to the release. New offerings include house-made focaccia (served with or without “tailored olive oil flights”), pasta dishes such as cacio e pepe and fra diavolo, and desserts including a chocolate torta caprese and a fig crostata from in-house pastry chef and baker Sarah Deale.

The restaurant’s wine list has also gotten an on-theme makeover, now featuring over 400 exclusively Italian bottles by Bluepoint Hospitality Beverage Director Anthony Austin. Mixed drinks include white negronis, limoncello spritzes and old-fashioned cocktails with Maryland tobacco.

“This transformation of Bluepoint Hospitality’s The Wardroom … represents an evolution from gourmet market and bistro to a tasteful and inviting 50-seat restaurant devoted to Italian viticulture and cuisine,” reads the news release.

The Wardroom is currently open from Tuesday through Saturday, for dinner service. Brunch service will begin Sunday.
